As soon as the fermentation is completed of the dried grapes for the Amarone, selected lots of Valpolicella are then re-passed on the Amarone pomace, thus initiating a second fermentation which increases slightly the alcoholic content and gives this fine Italian red wine deeper colour, increased extract, and more complex aromas. After 6 months bottle-ageing, the result is a rounded, velvety wine with rich, complex aromas of berries and an impressively lenghty finish thast seems to linger forever.

Grape varieties: Corvina / Corvinone, Rondinella, Molinara
Vinification: The grapes are picked by hand in October, which is later than usual. The term 'Ripasso' refers to the technique of adding the dried grapes and lees of an older Amarone wine to the young wine, making a second fermentation for 20/25 days transforming a young fresh wine into a rich full bodied wine suitable for aging in barrel and bottle.
Maturation: 12 months in 'Tonneaux' - small medium toasted barrels (5 hl) in Allier oak and oak barrels of Slavonia type.
Abv:13,5%.
Tasting notes: A wine with a full ruby red colour with garnet hues. The nose is intense, fruity with notes of dark cherries and dark berries followed by spicy notes and sweet liquorice. It's dry and soft on the palate with pleasant heat and elegant tannins, very persistent with a long pleasant finish.
This wine pairs very well with grilled/roasted red meat and medium aged cheeses.
Serving temperature: 16-18°C.
