Sauvignon Blanc 2010 (Peter Zemmer)
A delicate, aromatic white wine which, because of its pleasant acidity, can be cellared for long periods, developing an interesting and balanced nose. Greenish yellow to straw yellow in colour, its bouquet has tones of nettles, honey, bell pepper and elder blossom. It has a rich and harmonious flavour with good fruit and lasting acidity.
An ideal wine to pair with appetizers, asparagus, fish dishes and vegetable soups.

Valpolicella Classico Ripassa DOC 2008 (Corte Lenguin)
As soon as the fermentation is completed of the dried grapes for the Amarone, selected lots of Valpolicella are then re-passed on the Amarone pomace, thus initiating a second fermentation which increases slightly the alcoholic content and gives this fine Italian red wine deeper colour, increased extract, and more complex aromas. After 6 months bottle-ageing, the result i a rounded, velvety wine with rich, complex aromas of berries and an impressively lenghty finish thast seems to linger forever.

Mons Silicis Riserva 2006 (Borin Vini e Vigne)
This was Borin's first Riserva wine; its name derives from the ancient Roman denomination for the town known today as Monselice. It stems from a specific quest for quality and matures in the cellar for over 24 months, mostly in small French oak barrels. It displays a deep ruby red color and rich scents that range from those of the grapes of origin to those of balsamic herbs. On the palate it is complex and well-structured.

Le Chiusure
The Le Chiusure Farm is located in Portese, a small village close to San Felice del Benaco, only a few hundred meters from the shore of Lake Garda. Within a radius of one kilometer you will find the old country house in which we live, the cellar and all the vineyards (approximately four hectares) and olive groves (two hectares) in the three parts of our estate: the Brolo, enclosed by an old stone wall, the Campei, in the countryside of Portese, and the Roseti, overlooking the Salò bay. We produce around 20,000 bottles of wine and 1,000 of olive oil each year. The small size of our farm and the high value of the land in our area mean we are always striving to improve our products, adding value to everyday work and personal satisfaction, which makes us appreciate what we do far more than profit alone. We aspire to make products, and mainly wines, which have a clear personality and do not cater for the average customer's taste. The small size of our business allows us to be free from changing tastes, which are often tied to passing trends. We think of the flavoursome wines that our land can produce, wines that are persistent and recognisable across vintages, wines that do not bend to fashion but want to become classics in their field.
We believe it is important to express our position on "organic" farming and the quality of our products from this point of view. When we started this enterprise, one of the first moves was to certify our products as organic. Towards the end of the conversion period (three years) we had a very difficult season due to climate reasons. We lost a substantial part of our production and, what is worst, quality was badly affected. We reconsidered our position and were among the first few companies in the Brescia area to accept EEC regulations 2078/92 (than 1257/99) which, for the protection of consumer health, obliges farms to comply with a number of production standards (e.g. ruling out chemicals for weed management, strictly limiting the amount and frequency of anti-parasite products, and restricting fertilization according to a plan drawn up by a certified consultant). We had no difficulty in accepting these constraints, simply because we had already adopted them by free choice. We have now been farming according to these rules for nine years and do not certify our products as organic (as we could do most years) simply because we do not accept the idea that exceptionally harsh conditions should cause a loss of quality in the final product. Yet this does not mean that, with more experience, we shall not apply for official certification in the future.
